In 1888, the first Sugita Aijiro founded Sugita Shoten, which initially sold tea and indigo balls, the precursor to the brand "Aiya" (now Saijoen). Nishio tea production, which began in the early Meiji period, focused on producing high-quality tea from the outset, establishing the foundation for tencha tea, the raw material for matcha.

• Aroma: floral note, "ooika" aroma. Ooika is a unique aroma found in gyokuro, tencha, kabusecha, and other teas that are grown in shade-blocking conditions using cheesecloth or reed screens, and is said to be similar to the aroma of nori seaweed
