In 1888, the first Sugita Aijiro founded Sugita Shoten, which initially sold tea and indigo balls, the precursor to the brand "Aiya" (now Saijoen). Nishio tea production, which began in the early Meiji period, focused on producing high-quality tea from the outset, establishing the foundation for tencha tea, the raw material for matcha. 

With over 130 years of heritage, Saijoen remains dedicated to creating the finest matcha using meticulous techniques passed down through generations.
